Chocolate Marzipans

1lb/ 450 grams marzipan

1/2 cup very finely chopped candied cherries

1 oz / 25 grams preserved ginger chopped very finely

1 1/4 oz / 50 grams n0-soaked dried apricots very finely chopped

12 oz/ 350 grams semisweet chocolate

1 oz / 25 grams white chocolate

confectioners’ sugar to dust

Line a cookie sheet with baking parchment. Divide the marzipan into 3 balls and knead each to soften it.

Work the candied cherries into portion of the marzipan by kneading on a counter lightly dusted with confectioners’ sugar.

Do the same with the preserved ginger and another portion of marzipan, and then the apricots and third portion of marzipan.

Form each flavored portion of marzipan into small balls, keeping the different flavors separate.

Break the semisweet chocolate into pieces, place in a bowl, and set over a pan of hot water. Stir until melted. Dip one of each flavored ball of marzipan into the chocolate by spiking each with a toothpick, letting the excess chocolate to drip back into the bowl.

Place the balls in clusters made up of 3 flavors on the cookie sheet. Repeat with remaining marzipan balls. Chill until set.

Melt white chocolate and drizzle a little over the tops of each cluster of marzipan balls. Chill until hardened, then remove from the baking parchment and dust the marzipan with sugar to serve.
