Ambrosia Delight

Combine 1 package 3oz orange flavored gelatin and 1/4 cup boiling water in electric blender container. Cover and blend at low speed until gelatin is dissolved, about a minute.

Add 1 1/2 cups crushed ice and blend at high speed until ice is melted, almost 30 seconds.

Add 1 can (11oz) mandarin orange sections, drained and 1/4 cup coconut.

Pour into 6 dessert glasses; chill until set, 30 minutes.

Garnish with additional coconut, if desired.
