2 1/2 cups flour
1 1/4 tsp. each baking powder and soda
1 tsp. salt
3/4 cup margarine, softened
2/3 cup buttermilk
1/2 cup chopped pecans
4 cups confectioners’ sugar
1/2 cup softened butter
2 to 4 tbsp milk
2 tsp. vanilla
1/2 cup chopped toasted pecans
Combine flour, sugar, powder, soda and salt. Add butter, buttermilk and bananas; beat until ingredients are moistened. Add eggs. Beat 2 minutes at medium speed, scraping the sides of the bowl often.
Stir in nuts. Turn into ungreased 15×10 inch pan.
Bake at 350 degrees for 30 to 40 minutes. Cool. Frost.
For frosting; combine sugar, butter, milk and vanilla. Beat on low speed, scraping sides of the bowl often until combined. Increase to high speed and beat until fluffy, about 1 1/2 minutes. Fold in pecans.
