Smoked Bean and Vegetable Soup

1 lb. white beans

1/4 lb bacon

Smoked pork shank

2 onions, chopped

2 cloves garlic, chopped

1 medium rutabega, cubed

2 carrots, chopped


1 tbsp salt

1/2 tsp. black pepper

1/4 tsp. cayenne pepper

1 tsp marjoram

1 tsp thyme

1 bay leaf

10 cups water

2 potatoes, cubed

1 small cabbage, chopped

Wash beans. Cover with water. Bring to a boil. Cover and remove from heat. Let stand one hour. Drain.

Fry bacon, shanks, onion, and garlic and remove to large soup pot with rudabaga, carrots, spices, water, and beans.

Simmer for approximately 2 hours. Remove meat from bones. Cut up and put back in pot with cabbage and potatoes.

Simmer for another 3o minutes-1hour.

Serve sprinkled with parsley
