1 3/4 cups sugar
1/4 tsp salt
1 tsp grated orange peel
2 oranges peeled, sectioned and cut up
4 cups fresh bread cubes
1/2 cup flaked coconut
1/2 cup melted butter
Combine the sugar, flour, salt and orange peel in a mixing bowl. Stir in in the rhubarb and orange pieces. Add the bread cubes and coconut. Drizzle the melted butter on top and toss mixture well, but gently. Turn into a 8 inch square pan .
Bake at 350 degrees 35-40 minutes, or until light golden in color and rhubarb is tender.
Can be served with whipped cream or plain cream.
