Old Fashioned Apple Pudding

8 slices toasted bread, cut into cubes

1 cup evaporated milk

5 eggs

3/4 cups sugar

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1 can (1 lb ) pie sliced apples

1 cup raisins

1/2 cup brown sugar

Put bread and milk into a bowl & let stand. Beat eggs until foamy. Stir remaining ingredients except brown sugar into eggs. Mix egg & bread mixture. Pour into greased 9inch square pan. Sprinkle brown sugar over top. Bake @ 300 degrees for 50 minutes and serve with lemon sauce.

Lemon Sauce:

1/2 cup sugar

2 tbsp cornstarch

1 cup water

1/4 soft butter

1 tbsp grated lemon rind

3 tbsp lemon juice

Mix sugar & cornstarch in saucepan. Stir in  water gradually. Cook and stir until mixture boils. Boil until thick and clear. Take from heat and stir in butter, lemon rind, and juice.
