Coconut Squares

1 1/4 flour

1/4 cup sugar

1/2 cup shortening

1 cup crushed pineapple well drained

1 tbsp butter or oleo

1/2 cup sugar

1 egg

1 1/2 cup flaked coconut

Combine flour, 1/4 cup sugar and shortening in bowl, so it resembles cornmeal. Pat into 8″ square pan bake at 350 degrees for 15 minutes.

Remove from oven and top with pineapple. Set aside.

Combine butter, rest of sugar and egg. Beat well and add coconut. Blend thoroughly. Spread over pineapple. Return to oven and bake for 25-30 minutes at 350 degrees or until done.
