Neapolitan Cookies

1 cup butter or margarine softened

1/2 cup sugar

1 egg

1 tsp vanilla

2 1/4 cups flour

1/2 tsp salt

1 oz (1 square) unsweetened chocolate melted

1/4 cup chopped walnuts

2 tbsp finely chopped maraschino cherries

Mix butter, sugar, egg, and vanilla. Stir in flour and salt.

Divide dough into 3 parts. Leave 1 part plain; mix chocolate and nuts into 1 part and cherries into remaining part. Line loaf pan, 9x5x3 inches, with aluminum foil. Spread plain dough in bottom of pan. Top with a layer each of chocolate and cherry dough. Chill at least 2 hours.

Remove dough with foil from pan. Dough can be baked immediately or wrapped and refrigerated.

About 20 minutes before serving, heat the oven to 375 degrees. Cut dough into 1/4 inch slices, cut each slice in half crosswise. Place 1 inch apart on ungreased baking sheet. Bake until light brown, about 10 minutes. Remove immediately from baking sheet. Makes about 6 1/2 doz. cookies.
