Avocado Quesadillas

Depending on how many people being served use:

5-6 10″¬† tortillas

sliced avocados  or quacamole

picante sauce

Mozzarella cheese

Preheat your cooking surface,

Put a pat of butter on the cooking surface and let melt, next place the tortilla on the cooking surface, next sprinkle on cheese; then place place avocados on the cheese as much as you would like. Place a couple teaspoons of picante sauce on top of avocado. When the cheese has melted and the tortilla is lightly brown. Remove from heat and cut into triangles. Serve with salsa.

Chocolate-Chip Oatmeal Freezer Cookies

Basic Mix:

1 1/2 cups vegetable shortening

8 tbsp margarine

1/2 lb butter

3 cups each light brown sugar and granulated sugar

6 eggs

4 1/2 cups sifted all-purpose flour

1 tbsp salt

1 tbsp baking soda

9 3/4 cups rolled oats

1 tbsp vanilla

1 1/2 cups walnuts

2 cups chocolate chips

Beat the vegetable shortening, margarine, and butter until fluffy. Cream in the two sugars; beat in the eggs. Sift in the flour, salt and soda into the mixture and mix well. Stir in oats, vanilla, nuts, and chocolate chips.  Knead the dough for one minute. Divide it into 3 equal pieces, placing each on aluminum foil. Shape each piece if dough into a bar 2 inches in diameter. Fold the foil up and around each bar, double wrap if necessary. Freeze until needed.

To bake 3 dozen cookies; Cut 1/4 inch slices from one bar place on a well greased baking sheet. Bake in a 375-degree oven for 10-12 minutes, or until golden brown. Do not over bake. Use a spatula to transfer the hot cookies to a cooling rack.

Famous Oatmeal Cookies

3/4 cup soft shortening

1 cup firmly packed brown sugar

1/2 cup granulated sugar

1 egg

1/4 cup water

1 tsp vanilla

1 cup sifted flour

1 tsp salt

1/2 tsp soda

3 cups oats, uncooked

Beat shortening, sugars, egg, water and vanilla together until creamy. Sift together flour, salt and soda. Add dry ingredients to creamed mixture; blend well. Stir in oats. Drop by teaspoonfuls onto greased baking sheet. Bake in preheated 350- degree oven 12-15 minutes

For variety, add chopped nuts,raisins, chocolate chips, or coconut. Makes 5 dozen.

Soft Oatmeal Cookies

2 cups sifted flour

1 1/4 cups sugar

1 tsp each baking powder, salt, soda, and cinnamon

3 cups rolled oats

1 cup raisins

1/2 cup chopped nuts

1 cup corn oil

2 eggs

1/2 cup milk

Mix dry ingredients thoroughly. Add oil, eggs and milk in order. Blend dough well. Drop by teaspoon on ungreased baking sheet. Bake at 400 degrees 10-12 minutes. Makes 6 dozen.

Gum Drop Cookies

1 cup brown sugar

1 cup white sugar

1 cup shortening

2 eggs

2 cups flour

1/4 tbsp salt

1 tsp soda

1 tsp baking powder

1 cup coconut

2 cups oatmeal

1 cup gum drops

1 tsp vanilla

Mix above ingredients together. Drop by teaspoonful on cookie sheet. Press down with fork.

Peanut Butter Quickies

Mix in bowl:

2 cups graham cracker crumbs

3/4 cup evaporated milk

3/4 peanut butter

1 cup sugar

With teaspoon drop cookies onto greased sheet and bake 15 minutes or until slightly puffed, but still soft.

Makes 4 doz.
