Old Fashioned Jelly Roll

Makes 8 servings

5 eggs separated

1 cup granular sugar

2 tbsp lemon juice

1 tsp grated lemon peel

1 cup cake flour

1 tsp baking powder

1/4 tsp salt

1 cup grape jelly

1 tbsp lemon juice

2 tsp light cream

1/4 cup confectioners’ sugar

Line greased jelly roll pan 15″x101/2″x 1″ with wax paper, grease again. Set aside.

In small mixing bowl, beat egg yolks 5 minutes or until very thick and lemon colored. Pour into large bowl and gradually beat in granulated sugar. On low speed, blend in 2 tablespoons lemon juice and lemon peel. Beat egg whites until soft peaks form. Combine flour, baking powder, and salt. Add flour mixture to yolks alternating with egg whites, folding gently and thoroughly. Spread mixture evenly into prepared pan. Bake at 375 degrees for 12-15 minutes, until cake springs back to the touch.

Turn cake onto cloth which has been dusted with confectioners’ sugar. Quickly remove paper and trim the edges. Roll up in towel and cool. Unroll cake and remove towel. Beat grape jelly slightly with fork to soften, spread over cake. Roll cake up.
