Peanut Butter Chip Choc. Cookies

1 cup butter

1 1/2 cup sugar

2 eggs

2 tsp vanilla

2 cup flour

2/3 cup cocoa

3/4 tsp baking soda

1/2 tsp salt

2 cups peanut butter chips

Cream butter, sugar, eggs and vanilla until light and fluffy. Combine flour, cocoa, baking soda and salt. Add to creamed mixture. Stir in peanut butter chips. Chill until firm enough to handle. Shape dough into balls. Place on ungreased cookie sheet and flatten with fork. Bake at 350 degrees for 8-10 minutes. Makes 6 doz.

Choc-Mint Meringues

2 egg whites

2/3 cup sugar

1/8 tsp salt

1-6oz pkg mint chips

few drops of food coloring

Beat egg whites until stiff, but not dry. Add sugar and salt gradually. Beat until they stand in peaks. Fold in food coloring and chips. Preheat the oven to 400 degrees. Turn oven off. Bake 6 hours or overnight.  Yields 2 dozen.

Spritz Cookies

1 cup butter or shortening

1/2 tsp baking powder

2/3 cup sugar

2 1/4 cup flour

1 egg

1 tsp almond extract

Cream shortening; add sugar, then beaten egg. Add sifted dry ingredients and extract. Pack into press and press onto ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes

2 cup flour

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground cloves

1/2 cup butter

1 cup sugar

1 tsp soda

1 cup applesauce

1 beaten egg

1 cup chopped nuts

1 cup raisins

Sift together flour, cinnamon, nutmeg, and cloves.

Cream butter with sugar.

Stir soda into applesauce. Add egg. Combine applesauce mixture with creamed mixture. Gradually mix in sifted ingredients. Stir in nuts and raisins. Drop by teaspoonfuls on cookie sheet. Bake at 375 degrees for 15 minutes.

Oatmeal Macaroons

1 cup sugar

1 cup brown sugar

1 cup shortening

2 eggs

1 cup coconut

1 cup nuts

3 cup oatmeal

1 tsp soda in a little vinegar

1 tsp baking powder

1 1/2 cup flour

1/4 tsp salt

1 tsp vanilla

Choc. chips as desired

Susie-Q Doughnuts

Sift together:

2 1/2 cups flour

1/2 tsp salt

2 tsp baking powder

1/4 tsp nutmeg

Combine and Mix well:

1 egg, beaten

1/2 cup sugar

1 tbsp salad oil

Add dry ingredients alternately with 1/2 cup milk.Turn dough onto a floured board. Roll out to a thickness of 1/2 inch. Cut with a floured cutter. Fry in deep fat heated to 360 degrees. Turn frequently until golden brown.

This is by far the best recipe and easy!!!!!

Spicy Oatmeal Drops

2 1/2 cup flour

1 tsp baking soda

1/2 tsp nutmeg

1 1/2 tsp cinnamon

1 tsp salt

1 1/2 cup raw oatmeal

1 cup raisins

1 cup chopped walnuts

3/4 cup shortening

1/2 cup sugar

2 eggs beaten

1/2 cup milk

1 cup brown sugar

Sift together flour, soda, spices, and salt. Add oats, raisins, and walnuts. Mix well. Mix shortening, sugar and brown sugar until well blended. Add eggs and beat until fluffy. Add dry ingredients to shortening-sugar mixture, alternating with mix. Beat after each addition. Bake at 375 degrees 10-12 minutes.
