Iced Fruit Bars

1/2 cup shortening

1 2/3 cups sugar

1 egg

1/2 cup molasses

1 tsp vanilla

1/4 cup water

1 tsp cinnamon

1 3/4 tsp baking soda

1 tsp each ginger and salt

2 2/3 cups flour

2/3 cups flour

2/3 cups coconut

3/4 cups raisins

1/2 cup nuts

For glaze:

1 cup confectioners’ sugar

2 tbsp water

Cream shortening and sugar, add egg, molasses, vanilla and water. Beat. Sift dry ingredients and combine with the above mixture. Mix in coconut, raisins, and nuts. Divide dough into 4 equal parts. With floured hands, shape into 4 long rolls; flatten slightly. Lay on 2 well-greased and floured cookie sheets. Bake at 325 degrees for 20 minutes.

Cool only slightly. Frost with a glaze made with the confectioners’ sugar and water. Cut into 2-inch diagonal slices while warm. Makes 40.
