Choc-Mint Meringues

2 egg whites

2/3 cup sugar

1/8 tsp salt

1-6oz pkg mint chips

few drops of food coloring

Beat egg whites until stiff, but not dry. Add sugar and salt gradually. Beat until they stand in peaks. Fold in food coloring and chips. Preheat the oven to 400 degrees. Turn oven off. Bake 6 hours or overnight.  Yields 2 dozen.
