Blueberry Coffe Cake

1 can (141/2 oz) blueberries

1 1/3 cup flour

2/3 cup sugar

1 1/2 tsp baking powder

1/4 tsp salt

1/3 cup shortening

1 egg slightly beaten

1/2 cup milk

1/2 cup coconut

Drain blueberries and rinse with water. Sift flour, sugar, baking powder, and salt into bowl. Mix in shortening. Add egg and milk and mix quickly. Fold in blueberries. Pour batter into greased 9″ round pan. Sprinkle Coconut on top. Bake at 375 degrees for 25-30 minutes or until cake is done.

Orange Nut Coffee Cake

2 cup bisquit mix

1/4 cup sugar

2/3 cup milk

2 eggs beaten

1/2 cup chopped nuts

Combine all ingedients in bowl and mix well. Spoon mixture into greased 8″ pan. Bake 25-30 at 400 degrees or until done.

Orange Topping:

1/3 cup butter

2/3 cup brown sugar

1/2 cup grated orange grind

1/2 cup chopped nuts

1/2 cup orange juice

Combine butter and sugar. Mix well. Spread over cake. Sprinkle with rind and nuts and pour juice over all. Broil until bubbly.

Dutch Apple Bake

1 1/2 cup flour

1/2 cup sugar

1 1/2 tsp baking powder

1/2 cup milk

1/4 cup melted butter

1 egg beaten

1 tsp vanilla

1 can (1 lb) pie sliced apples

1/2 cup brown sugar

1 tsp cinnamon

Sift flour, sugar, and baking powder. Add all at once a mixture of milk, butter, egg, and vanillla and mix until smooth. Pour into 8″ inch square pan. Arrange apple slices onĀ  top. Sprinkle brown sugar and cinnamon over apples Bake at 350 degrees for 50-55 minutes. Serve warm with Applescotch sauce.

Applescotch Sauce:

1/2 cup brown sugar

3 tbsp cornstarch

1 cup apple juice

3/4 cup water

Mix brown sugar and cornstarch well in a saucepan. Stir in apple juice and gradually. Cook and stir until mixture boils. Boil and stir 1 min until thick and clear.

Apple Butter Cake

2 cup flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp nutmeg

1/2 tsp cinnamon

1/2 tsp cloves

3/4 cup sugar

1/2 cup shortening

2 eggs

1/2 cup buttermilk

1 cup apple butter

Sift flour, soda, salt, nutmeg, cinnamon, and cloves. Beat sugar and shortening until fluffy. Add eggs ans beat until smooth. Beat in dry ingredients alternately with milk. Stir in apple butter. Pour into a greased loaf pan. Bake at 350 degrees for 55-65 min or until done. Cool before removing from pan and top with orange glaze.

Orange Glaze:

1 cup powdered sugar

2 tbsp orange juice

1 tsp grated orange rind

Mix all ingredients together.

Apple Sauce Cake

1 3/4 flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp nutmeg

1 1/2 tsp cinnamon

1/4 tsp cloves

1 cup brown sugar

1/2 cup shortening

1 egg

1 1/4 cup applesauce

1 cup raisins

Sift flour, soda, salt, and spices. Beat brown sugar, shortening, and egg until light and fluffy. Mix in dry ingredients alternately with applesauce. Stir in raisins. Pour into greased 8″ pan. Bake at 350 degrees for 45 minutes or until done. Sift powdered sugar over the top before serving.
