2 cups packed dark brown sugar
1/4 cup dark corn syrup
1/4 cup water
2 egg whites
1 teaspoon vanilla
1/2 cup chopped walnuts
In a buttered heavy 2-quart saucepan combine sugar, corn syrup, and water. Cook, stirring constantly, till sugar dissolves and the mixture comes to boiling. Cook over medium heat without stirringĀ till candy thermometer registers 260 degrees (hard-ball stage). Remove from heat. In large mixer bowl immediately beat 2 egg whites with electric mixer to stiff peaks( tips stand straight). Generally pour hot syrup in a thin stream over beaten egg whites, beating constantly at high speed for 6 minutes. Add vanilla. Continue beating 10 minutes or till the mixture form soft peaks( tips curl over) and begins to lose gloss. Stir in nuts, if desired. Let stand 2 minutes. Drop by level teaspoons onto buttered baking sheet. Bake in a 300 degrees oven 20 minutes.
It tastes great dipped in chocolate.
